Rolo Cookies

1 package Devils Food Cake mix (milk chocolate works too)
2 eggs
1/3 c oil
Rolos

Use 1" scoop to divide batter, flatten and seal around Rolo.  Bake at 350° 7-8 minutes

Banana Chocolate Chip Dessert

3/4 c butter
2/3 c white sugar
2/3 c brown sugar
1 egg, beaten
1 t vanilla
1 c mashed bananas
1 3/4 c all-purpose flour (I used 1 c white, 3/4 c wheat)
2 t baking powder
1/2 t salt
1 c semisweet chocolate chips

Preheat oven to 350°.  Grease and flour 10x15" jelly roll pan (I use pampered chef rectangle stone)

In large bowl, cream butter and sugars until fluffy.  Beat in egg and vanilla.  Fold in mashed banana.  In separate bowl, mix flour, baking powder and salt.  Fold flour mixture into butter mixture.  Stir in chocolate chips.  Spread in prepared pan.

Bake in preheated oven 20 minutes, until set.  Cool before cutting into squares.

Double Chocolate Brownie Cookies

The ingredients:

2/3 cup shortening (Crisco)
1-1/2 cups brown sugar
1 Tbs. water
1 tsp. vanilla
2 eggs
1-1/2 cups all-purpose flour
1/3 cup cocoa
1/2 tsp. salt
1/4 tsp. baking soda
1 package (12-ounces) semi-sweet chocolate chips

Directions:

Cream shortening, brown sugar, water, and vanilla together.  Add eggs and mix well.  Add flour, cocoa, salt, and baking soda; mix just until combined.  Stir in chocolate chips.  Bake 7-9 minutes on parchment paper lined cookie sheet at 375 degrees for 7-9 minutes.  The tops of the cookies should still look slightly moist when done.  Cool 2 minutes before removing to wire racks.  Make 24-30 medium size cookies.

Chocolate Mint Brownie Cookies

Ingredients
1 1/2 cups (9 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) butter or margarine, softened
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/2 teaspoon peppermint extract
1/2 teaspoon vanilla extract
2 large eggs
3/4 cup chopped nuts (I left these out - why ruin a perfectly good cookie by adding nuts!?)
 
MELT 3/4 cup morsels in small, heavy saucepan over lowest possible heat. When morsels begin to melt, remove from heat; stir. Return to heat for a few seconds at a time, stirring until smooth. Cool to room temperature.COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar, peppermint extract and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Beat in melted chocolate. Gradually beat in flour mixture. Stir in remaining morsels and nuts. Drop dough by rounded tablespoon onto ungreased baking sheets.BAKE in preheated 350° F. oven for 8 to 12 minutes or until sides are set but centers are still soft. Let stand for 2 minutes; remove to wire racks to cool completely.

Grape-Nuts Cookies

1/2 c softened butter
1/2 c firmly packed dark brown sugar
1/2 c sugar
3 T honey
2 eggs
2 t vanilla
1 t baking soda
1/4 t salt
2 c rolled oats
1 c flour
1 c Grape-Nuts cereal

Preheat oven to 350•

Beat butter and sugar in large bowl with electric mixer on medium speed until smooth. Add honey, eggs, and vanilla; mix well.

Add baking soda, salt, rolled oats, flour, and Grape-Nuts. Combine until just mixed.

Drop rounded tablespoons of dough, 2" apart onto lined or greased cookie sheets. Bake for 10-14 minutes or until golden brown.

Cool 2-3 minutes; remove from baking sheets. Cool completely on wire racks.

Makes 4 1/2 dozen cookies.
